The good color and firm acidity of this variety have made it a great and favorite component in blends from the outset. However, once a Tinta Barocca vineyard has grown into old age, it has all the complexities and qualities to be bottled on its own. Tinta barocca has an amazing ability to capture the Swartland in its purist form. It is always a deeper wine whith much more time required in aging. Whole-bunch grapes are naturally fermented with minimal intervention, wetting the cap once a day, and the occasional punchdown. After fermentation it is pressed into concrete and old wooden casks where it will age for about 12 months before bottling.
