Beatrice and Pascal Lambert’s 14-hectare domain lies close to the centre of Chinon, home to some of the region’s finest terroirs for Cabernet Franc and Chenin Blanc. The domaine was founded in 1987 and certified organic and biodynamic in 2004. With their draughthorse, Beatrice and Pascal plough the rows between the vines, planting different cover crops each year to assist with their biodynamic preparations while giving back nutrients, never adding any chemical inputs to the soil. This mineral-driven rose is succulently full of notes of ripe summer red berries and a touch of green herbs. Grapes were harvested by hand before being pressed in a pneumatic press, before fermentation and five months of ageing in steel.
