Katsuyama Diamond Akatsuki is an ultra-premium Junmai Daiginjo sake produced by Katsuyama Shuzo in Sendai, Miyagi Prefecture. It is made entirely from Yamada Nishiki sake rice polished to 35% and crafted using a centrifugal separation method designed to extract exceptionally pure sake without heavy pressing. The result is an elegant, refined and aromatic sake with a silky texture, delicate sweetness and a clean, precise finish.
