The Bessin family has been producing Chablis for over a century from their family estate in La Chapelle Vaupelteigne, France. Jean-Claude and his wife Evelyne are the fourth consecutive generation to manage the Domaine, and are now being assisted by their son. They practice lutte raisonnee they plow between rows to encourage the vines to establish deep root systems and do not use pesticides. The fruit is harvested by hand and the whole clusters are gently crushed using a pneumatic press. Jean- Claude and Evelyne have maintained the same wine philosophy for 20 years vinify each vineyard separately in temperature-controlled tanks and in barrel, with no micro-oxygenation and no intervention to reveal the inherent typicity of its terroir.
