The grapes for the Syrah on Shale The Landscape Series come from the Bokkeveld vineyard, which has a slate (shale) soil. The grape bunches are harvested manually in optimal condition with strict selection. In the vinification room, 40% of the bunches are left whole and the remaining 60% are destemmed and crushed. The crushed grapes and whole bunches are then subjected to alcoholic fermentation with wild (grape's own) yeasts in stainless steel tanks. This is followed by pressing and the young wine is transferred to French oak barriques of 225 and 500 liters, of which 30% are new, for malolactic fermentation and maturation. Assembly and bottling follow after 18 months.
