Tobalá is a small and highly prized agave traditionally found in the highlands of Oaxaca. The agave is traditionally pit-roasted, crushed, naturally fermented and double-distilled, producing an intensely aromatic and complex mezcal with distinctive fruit, floral and mineral characteristics.
