An ingenious and absolutely delicious bottling from a fresh face in Cognac's Fin Bois growth. David Ramnoux took over the family farm in 1997 from his father who, in a prescient move, converted their 8.5 hectares of vineyards to organic and biodynamic farming as early as 1992. A flattering pineau by any measure with excellent poise, suppleness and acidity to make it David blends in the estate's cognac aged for over a year in new French oak at full strength to a blend of ugni blanc, colombard and semillon. The pineau is aged on the lees for a year and a half before bottling. Notes include honeysuckle, white peach, rose water, lemon curd and white tea. A great aperitif served well chilled and especially great with an assorted cheese plate and salted nuts.
