Sauvignon Blanc grapes, often called Sauvignon, originated in France and are grown in all regions of Italy, where arguably the best Italian example is found in the Veneto region. Our Sauvignon Blanc is dry, crisp, acidic, and fruity. The sauvignon blanc grapes are manually harvested, soaked for a few hours with selected yeasts, and fermented below 20° C. Then, resting on the lees under the protection of nitrogen, maturation occurs in stainless steel tanks at controlled temperatures to avoid malolactic fermentation. It pairs perfectly with delicate first courses, main courses with seafood, poultry, salad, and pasta, and is a nice match for cream or oil-based sauces.
