Augstine Straight Bourbon is made from a mash bill of 60% Florida corn, 22% barley, and 18% Florida wheat. The grains are milled and mashed onsite, and fermented with proprietary yeast strains in closed-top fermenters. After distillation, the spirit is aged for a minimum of three years in new, 53-gallon oak barrels, which have been toasted and charred to the distillery’s custom specifications. Their distillers sample the spirit periodically, tracking and grading each barrel through its life cycle, and select the barrels to harvest. These barrels are married in small batches of 16 – 40 barrels, taking into account each barrel’s location and height in the warehouse, which ensures a consistent flavor profile. Their Florida interpretation of America’s spirit is then hand bottled at 100 proof, without chill filtration.
