The organically produced grapes for this wine come from the Languedoc region of Southern France, where the climate is dry and sunny. Hand picking takes place at night when conditions are cool. The grapes are pressed immediately on arrival at the winery; then the juice is allowed to cold settle for 48 hours before vinification in stainless steel vats at low temperatures to retain the desired aromas. After fermentation, the wine continues to harmonise flavours for a few months on fine lees before bottling the following spring.
