100% Picapolla, (not to be confused with Picpoul) a grape that is very closely related to Clairette. This varietal is known for its ability to retain acidity, even in the warmest of climates, therefore these grapes, around 15 years old, are ideally suited to areas of Mas Mares closest to the sea.\n\nGrapes are hand harvested, undergo a 24 hour cooling, and are partially destemmed. Gentle pressing, fermented and aged in concrete eggs for 6 months.
