It's an ideal microclimate for the obscure, indigenous Skrlet varietal that they focus exclusively on. This wine is medium-bodied with brisk acidity and notes of under-ripe peach, lime zest, and green apple. Harvested during the cool, pre-dawn hours and fermented in stainless steel, this pure, fresh white is a perfect pairing for flaky fish like cod and haddock but can also cut through the spiciness of Ojingeochae Bokkeum, Korean spicy dried squid!
