We select grapes from our own certified organic vineyards in different areas of the DO Rueda, where poor, gravelly soils predominate, with significant limestone outcrops at medium and high altitudes. We also include grapes from old vineyards with very low yields, over sixty years old and with different planting densities.
The grapes are harvested at night to achieve the greatest protection of the berries' aromas. Once in the winery, the temperature is lowered again and the skins are pressed very gently in the cold to achieve the deepest and richest transfer of aromas. The settling is natural and cold. Fermentation, which is spontaneous, also starts cold with the must cleared by decanting, without the intervention of filters or manipulations. In addition, part of the fermentation takes place in barrels and is then added to the final blend of the wine, which makes its tannins fine and polished.
